Globally, everyday chefs frequently attempt to convert a simple bag of potatoes into a hearty evening meal. My own cooking adventures might lead to a spicy Sri Lankan potato curry, a flavorful Gujarati version, or even a patiently simmered Spanish tortilla for a cozy occasion. On this occasion, however, the solution comes from Greece. Yahni describes a traditional Greek preparation technique: produce slow-cooked amply in olive oil and tomatoes until deliciously soft. It’s more than a recipe—it’s a endorsement of the simple, the slow, and the incredibly satisfying (and yes, it also makes a wonderful dinner).
Enjoy this with warm bread or grilled bread for a substantial dinner. It also goes perfectly with a few mezze or even topped with a fried egg for a unexpectedly great breakfast.

Serves: 4 people
Place five tablespoons of olive oil in a wide, deep-sided pan that has a fitting lid. Set it over a medium-high heat. Once the oil is heated, add the thinly cut onion and a teaspoon of salt. Sauté, giving it an occasional stir, for about 10 minutes, until the onion is soft enough to yield to a wooden spoon.
Add the minced garlic and cook for a further two minutes, while stirring. Then, add the potato wedges and oregano, mixing until they are evenly covered in the oil. Mix in the tomato puree and cook for one minute. Tip in the chopped tomatoes along with 400ml of water. Let it come to a boil, then put the lid on, turn down the heat to a steady bubble, and leave to cook for 20 minutes.
Meanwhile, prepare the whipped feta. In a small bowl with a hand blender, combine the feta, Greek yoghurt, lemon zest and juice, three tablespoons of olive oil, and a couple of good pinches of salt until the mixture is smooth and creamy.
Fold the pitted kalamata olives into the tomato and potato mixture. Leave it to bubble without the lid for a further 15-20 minutes, until the potatoes are tender all the way through and the sauce has reduced to a rich consistency.
Serve the warm yahni into serving dishes. Top each with a liberal amount of the whipped feta and a light sprinkling of dried oregano.
